What's for Dinner?

I love cooking for my family, but sometimes with everybody’s busy schedules it’s 6:00 o’clock and I have to get dinner on the table fast!
My go to recipe is inspired by Molly Gilbert author of Sheet Pan Suppers is Quick Chicken and Broccolini with Spicy Peanut Sauce. It’s healthy, delicious and super easy.
Below is my spin on her wonderful recipe.


Chicken Thighs with Broccoli and Peanut Sauce:  -Organic Olive Oil Spray
-1 Tablespoon of Dark Brown Sugar
-1/2 cup of organic creamy peanut butter
-1 tablespoon toasted sesame oil
-1/4 cup low sodium soy sauce
-1 tablespoon sriracha sauce
-1 tablespoon rice vinegar
-1/4 cup warm water
-1 ½ tablespoons of freshly squeezed lime juice
-2 bunches of broccoli
-6 to 8 Boneless/ skinless organic chicken thighs (breast are great too!)  

Lets get Cooking: 

Step 1: Preheat oven to broil and coat sheet pan with avocado oil

Step 2: Whisk together brown sugar, peanut butter, sesame oil, soy sauce, lime, water, and vinegar until smooth. Set aside ¼ cup of peanut sauce for later

Step 3: Place the chicken and broccoli tight together on sheet plan. Coat the chicken and broccoli with the remainder peanut sauce. Place in oven for a total of 14 minutes, flipping chicken half way through. You’ll know its done when sauce is a deep brown color and bubbling.

I love serving this dish with white or brown rice. Serve hot off the pan and use the remainder of the peanut sauce for dipping. *Not suitable for children and adults with peanut allergies.
